Fried squid with onions, garlic and black olives served with spaghetti


Portions for 1 serving:

8oz squid white

1 onion

1 clove of garlic

10 pitted black olives


8oz spaghetti (4oz dry pasta)


1 tbsp olive oil

Thyme



Ask your fishmonger to prepare the squid and cut the white in 1"x1" squares.

Cut the onion in quite large squares.

Heat a ceramic pan with the olive oil. A stainless steel pan can also be used but cooking is faster, so beware of cooking times. Throw in the pieces of onion which shouldn't cook to much. When they are coloured, add the squid.

When the pieces of squid are slightly coloured one side, turn them over and add a crushed clove of garlic and the thyme.

5mn before end of cooking, add the pitted black olives cut in half.

Serve as starters like tapas or as a main course with spaghetti.

If you have leftovers, the squid can be eaten cold with olive oil or vinaigrette.
